Ingredients:
- 1 cup premade pesto
- 300g pasta of choice
- 2 tsp salt
- 3/4 cup pasta cooking water
- 1 cup chorizo (sliced and halved)
Directions:
- Heat a big pot of water and add some salt once it starts boiling.
- Put the pasta into the boiling water and cook it for the time recommended on the package.
- Right before you drain the pasta, take out one cup of the water to be used later.
- Pour the pasta into a colander to drain, and let it sit for a minute.
- In a separate bowl, transfer the pasta and mix in the pesto along with 1/4 cup of the pasta water. Stir well to cover the pasta with pesto, and add more water if needed to make the pasta smooth and saucy.
- Add the sliced chorizo, salt and pepper if desired.
